Hello Bug eaters! I hope everyone had a wonderful week! On Sunday was mother’s day ( at least in most parts of Europe) – a great occasion for some spring baking action! We had a huge breakfast at home with the whole family and later these fabulous mini tarts for coffee. I have a great recipe coming up for a spelt flour/ cricket flour bread – so watch out for that! Get your apron out and get baking!
These tarts do take a bit of time. They consist of a vegan cake base and various berry flavoured cream cheese layers. The more layers you like, the more time you need. I went with a blueberry, a raspberry and a plain layer. You can also go skyscraping and build as many layers as you wish.
To prevent a leaning- tower- of- pisa- situation it is best to use a cake shaping form. The more layers you have – the higher your tower is likely to fall over during the baking process. I bought these off amazon ( 12 € for 6 forms) and they worked magic!

Mini Berry TartsPrint Recipe
- 50g cashews (soaked)
- 400g dates
- 3tsbp cocoa powder
- 10tbsp oats
- 8 tbsp almond powder
- 400g soaked cashews
- 3tbsp coconut oil
- 1tbsp organic vanilla extract
- 1 can coconut milk
- 10g cream cheese
- 4tbsp almond flour
- various berries
For the base mix all ingredients together in a food blender until you have a semi smooth dough. Start with the cashews, move to the oats and start mixing the rest in.
Make the cheesecake filling, starting with the cashews. Then adding the rest.
Depending on what berry flavor you would like to achieve, mix a hand full of berries in. I used blue berries for the middle layer and the top layer is simply a "cheesecake layer". But you could also go crazy and do various different berry layers :O
In a form place the bottom layer first and let cool for 20 min. Then add the next berry layer. Let cool again. Repeat for all layers.
Serve garnished with chocolate and berries <3
